Capsicum

Capsicums are a rich source of antioxidants and a single raw capsicum can contain over 100% of the daily recommended amount of vitamin C, and 10% of the suggested daily amount of vitamin A. Capsicums also have unique protective functions, some studies showing capsicums as assisting in the prevention of cancers in the colon and lungs.

Capsicums contain healthy amounts of the vitamin B6 and folic acid (B9), these have been shown to reduce homocysteine which at high levels can damage our blood vessels which can lead to the development of heart disease. While homocysteine is a natural byproduct of metabolic processes, it does need to be broken down to healthy molecules. Vitamins B6 and B9 are essential for this process.

A single raw capsicum contains 10% of the recommended daily amount of dietary fibre; the fibre is essentially for sweeping toxins out of the colon and intestinal tract, strengthening these areas against cellular damage. Also helpful for preventing cellular damage are the exceptional quantities of vitamin C and A in capsicums. While the vitamin A is initially in the beta carotene form, it still performs vital antioxidant functions by reducing free radical damage. Some studies have shown that a diet high in vitamin A, particularly by way of vitamin rich foods such as capsicums, can alleviate the damage caused by cigarette smoking. Tobacco has been shown to specifically deplete vitamin A. It is this same vitamin which is responsible for the health of the linings of the airways so restoration of therapeutic levels opf vitamin A is essential for those exposed to cigarette smoke.

Capsicums also contain some very specific antioxidants, the phytonutrients lutein and zeaxanthin. These have a unique function in that they have a protective effect on the cells of the eyes responsible for fine vision. These phytonutrients have been shown in some studies to prevent macular degeneration which leads to cataracts, that is, damage to cells of the eye. Vitamin A also has a protective function in terms of the retinas of the eye.
