Cauliflower
Surprisingly one cup of cauliflower can provide nearly 90% of the daily recommended amount of vitamin C, it is also a good source of folate and vitamin K. Cauliflower contains many helpful phytonutrients which some research links to preventing cancer and inflammatory conditions. Alongside its protective functions, cauliflower is an excellent source of antioxidants.
Vitamin C strengthens our immune system and helps build healthy skin and bones. This is because it has a role in the formation of collagen, which accounts for the structure of our body tissues. It also indirectly helps us manage stress in that vitamin C supports the functioning of our adrenal glands.
Cauliflower is a good source of vitamin K. Vitamin K helps regulate the use of calcium in our systems. It helps regulate the effective metabolizing of calcium for day to day nerve functions, and, in terms of taking it and replacing it from bone storage sites. Vitamin K plays a similar role in regulating the clotting factors in blood.
Cauliflower, along side Kale and Broccoli, is one of the top sources of plant sterols which much research suggests help prevent the development of heart disease through having a lowering effect on serum cholesterol. Cauliflower is also suggested as being an excellent preventative in that it contains good amounts of sulforphane. Sulforphane converts to isothiocyanate which some studies has shown to negatively affect cancer cell development. Cauliflower is an excellent source of nutrients and offers a good amount of dietary fiber.
