Winter is nearly upon us, the leaves have turned, and there is a chill in the air. But there is plenty still to be done in the garden!
This kind of weather is perfect for warm stewed rhubarb, or for something different read on for the recipe for Cass's rhubarb and white chocolate cake. Also in this edition read all about tools, June gardening, and Rachel Vogan's tips on Microgreens.

Veggie Gardener's Diary – June
With June comes the shortest day of the year in the Southern Hemisphere. Many say that the winter solstice is the best day to begin a garden. This is a good month for planning and thinking about crop rotation for the coming spring plantings.
Garden Chores for June:
- Put old carpet or plastic bags over your compost bin to keep extra heat in over winter. The decomposition process will slow down in cold conditions.
- Winter time is a good time for garden chores, like building a sheltered lean-to for seedlings, constructing a bird feeder, making compost etc.
- Return the crowns of rhubarb to the ground and mulch with Tui Pelletised Pea Straw Mulch.
- The ground intended for carrots and other root vegetables should be dug over, manured and toiled. The soil needs to be well broken-up before planting.

In Focus: Rhubarb
Did you know: Rhubarb is in fact classed as a herb not a fruit or vegetable?
Top Tips
- Plant: June-December
- Tolerates most soil but likes organically rich soil
- Rhubarb is a long term crop so expect best returns in the second year
- It is a hardy plant so generally easy to grow
- The leaves are poisonous so only eat the stalks
- Rhubarb can be planted as an ornamental as it is very bright when mature
Nutritional Information
Rhubarb is an excellent source of minerals. Surprisingly a cup of Rhubarb is thought to provide around 10% of the recommended daily amount of Calcium.
It also contains antioxidants such as vitamin C and anthocyanins which account for the red colour in the stalks of Rhubarb.

RECIPE: Rhubarb and White Chocolate Cake |

Cass from the Tui Team has shared her family's recipe for Rhubarb and White Chocolate Cake. Cass's Tip:
"I like to leave the rhubarb in chunks and use white choc buttons so you bite into big bits of rhubarb and chocolate!"
Ingredients
1 1/4 cups of finely chopped rhubarb
100g of good quality white choc chips
2 1/2 cups of self-raising flour
1 cup of caster sugar
1 teaspoon of vanilla essence
2 eggs, lightly beaten
1/2 cup of plain yoghurt
125g of butter, melted

Garden Question of the week:
What is good to plant in the winter in a small garden? I don't want to leave it empty all winter. I like herbs but I would also like to put in some vegetables as I have found it very exciting being able to go out and harvest some veggies for the dinner table.

In winter you can sow broccoli, broad beans, cabbage, carrots, cauliflower, cress, lettuce seeds and peas. Try planting cauliflower, celery, winter lettuce and silverbeet in warm spots. Growing Microgreens – Rachel Vogan
Quick, easy and super tasty, microgreens are crops that the whole family can grow and enjoy without even leaving the comfort of indoors.
These fast growing tasty tiny tender leaves are harvested within a matter of days of the seeds germinating. The trick to successive crops is to keep sowing seed every few weeks to ensure a continuous supply. Use in salads, as garnish or cooked.
