Broccoli Balls

Do you eat broccoli stalks? Broccoli stalks are both edible and delicious. Research conducted by Love Food Hate Waste has revealed that over 2,500 tonnes of broccoli stalks (and leaves) are thrown away by Kiwi households every year. This recipe for broccoli balls is a great one to make with children as it teaches them that the stalks are edible as well as encouraging them to eat more vegetables.

Ingredients

  • 2 cups broccoli, made up of grated broccoli stalk and/or cooked broccoli florets, finely chopped
  • 1 small onion grated or finely chopped
  • 1 egg
  • 1/3 cup plain flour
  • 1/2 cup parmesan cheese, grated
  • 1/4 teaspoon salt
  • Pepper, to taste
  • 1 tablespoon fresh herbs, finely chopped (optional)
  1. Preheat oven to 180°C.
  2. Mix all of the ingredients together.
  3. Roll the mixture into teaspoon sized balls then place on a baking tray lined with baking paper.
  4. Bake for 12-15 minutes, turning the broccoli balls about 8 minutes into cooking time.

  • You didn't mention eating the peeled stalks raw. I've done this for years, delicious crunchy and tasting slightly like mild radish. A sprinkle of salt adds to the experience. Better than raw cauliflower stalks, which I also crunch raw.

  • Made them tonight. Very nice. I left them in longer than recipe says but they didn't brown as much as the pic. I also added some celery, bell pepper and some cauli to bulk up.

  • The tender stalk nearest the florets doesn't even need to be peeled, and I always slice and steam it with the rest of the broccoli. (I must admit that I do throw away the tough lower stalk though, but it goes into the compost bin and back into our garden!)
