Sue's Dutch Apple Cake

This apple cake is a favourite of Gemma from the Tui team's. The spiciness from the cinnamon makes it a perfect afternoon tea treat in winter.

Ingredients

  • 2 eggs
  • 1/2 C sugar
  • 125g melted butter
  • 1 C self raising flour
  • Rind of 1 lemon
  • 3 apples, peeled and chopped up
  • Cinnamon and sugar for sprinkling on top

Note this cake is baked in a ring cake tin - a cake tin with a tube up the centre to leave a hole in the middle of the cake.

Method: 

  1. Turn oven onto bake 180 degrees celsius
  2. Beat the eggs and the sugar
  3. Melt the butter, cool and add to the eggs and sugar
  4. Add the self raising flour, lemon rind and apples to the mixture and mix to combine
  5. Pour into a greased ring cake tin
  6. Sprinkle with a generous amount of cinnamon and sugar
  7. Bake for 30-40 minutes

I'm going to try it first (since dawn had a great review) so I look forward to the outcome...if successful, have the whole class cooking for their own for morning tea...I'l let you know the end result...
This recipe is wonderful. I have mae it twice now; first for the ffamily, then for the cast of my son's play; both times a stand-out success. It is so easy to make, too!
Have made this cake twice in the past week, once for an Embroidery group afternoon tea and the second time as part of a Fishing Club shared meal. Both times served with cream. Has been very successful and is lovely
